For the first time, keep your cooking clay pot in normal water or rice water at least 20 to 24 hours. 2. After that remove the vessel from water and allow it to dry at least 4 to 5 hours under the sunlight or fan, after that you can make use of vessel on slow gas. 3. The pots which are not to be used for cooking can be used just after washing them. 4. Clay pots should always be used on slow gas so the pots always stay strengthened. 5. One thing must be kept in mind that when the pot is hot, do not put it in a moist place, let it cool down, or keep it in a dry place. 6. To wash the pots, use a soft cloth or scrub with warm water. You can also use cow dung's ash to clean the pots. BEFORE COOKING IN: For waterless or oil-free cooking you may read the following steps: Unglazed clay pot and lid must be completely submerged in water for at least 15 minutes or more prior to cooking. The unglazed, porous pot absorbs the water. During the cooking process when it is slowly heated, the clay releases steam which gently cooks the food. This prevents foods from drying out. Natural juices and flavors are retained in the pot while nutrients are preserved.
